The past few days have been most wonderful. I have spent them catching up with my mum and dad in their lovely, cosy home. Baking scones, creating art and making a dress for an upcoming photo shoot based in the 1950’s of which I will have to be one of the models, weird… I’m not usually one of the models for one of my own shoots, it should be a great day though, cant wait =).
But anyway back to the scones, most delicious adaptation yet… K you will like this! I know what you are thinking, why didn’t Mum do that before you left hehe! Well she calls them the ploughman’s and once you see the recipe you will understand why!
A’s Ploughman Scones – Cheese, Onion, Pickle.
Ingredients
5 oz cheese
Approx. 10 small pickles
A tablespoon of dried onion
8 oz wholemeal self-raising flour
¼ teaspoon baking powder
¼ teaspoon cayenne pepper
1 teaspoon of mustard powder
2 tablespoons extra virgin olive oil
2 eggs
2 tablespoons of milk
Method
Whisk eggs and milk together, then add dried onions to mixture – put aside. Put baking powder and flour into a big bowl, add cayenne pepper, mustard powder, salt and pepper, then add the oil. Mix with a knife to form bread crumbs, then add the cheese and pickles. Now add egg/onion/milk mixture to the bread crumbs and work together with hands, to form a dough! Then roll the mixture onto a floured surface, then cut into approx 2 inch circles, but don’t worry if you have not got the right size =)… then place them on grease proof paper on a baking tray, and brush them with the left over egg mixture!
Place them in the oven at 220 Degrees C or 425 Degrees F or Gas mark 7.
Bake for 12-15 minutes until lightly golden.
