lazy morning. coffee. banana pikelets.

mmmm delicious, banana pikelets and fresh hot coffee on a lazy morning... things can not get any better... listening to seventies tunes whilst the sun in shining through my light filled apartment. Joy. 

I thought I would share with you this morning an amazing banana pikelet recipe I whipped up. I do highly recommend it... it was approved by A with a huge smile and no words as he gobbled it down this morning. 

Here it is... vanilla, banana, flax seed pikelets! YUM!


It will take no longer than about 15 minutes before these are sitting pipping hot on your plate... I added some honey and cinnanon sugar on the top of time... but you could pop some strawberries or more banana on top too if you feel so inclined. 

This is what you need to get in on the action.... 1 egg, 1/2 cup of brown sugar, 1 banana, splash of vanilla essence, 3/4 cup of skim milk, 1 1/4 cups of self-raising flour, 1 table spoon of flax seeds, and some margarine for the frying pan. 

Whisk egg in small bowl... put to the side, 

Mash up the banana in a larger bowl, then add the egg, milk, vanilla essence and the sugar, give it a good mix,

Stir in the flour... perhaps in three parts to stop the mixture from getting lumpy, 

Let it sit for a moment whilst you get the frying pan ready to allow the mixture to thicken,

Heat the frying pan on a medium heat, then place table spoons of the mixture in the pan,

After about 1 and a half minutes little bubbles will appear on the top of the pikelets, give em a flip and cook them for a further 2 minutes on the opposite side, 

If you want to cook more for a stack, set them aside covered with a tea-towel so they do not dry out,

Serve... AMAZING!
